About The Missing Rib BBQ

The Missing Rib BBQ is a mobile catering service specializing in traditional American barbeque and grilling. Officially started in July 2004, the catering business came about with my inability to find a storefront location in Napa, CA where I could start a barbeque restaurant business. During the market research phase of getting the business going, I found that very few Napa residents had a positive response to what is limitedly available as barbeque in our area. In an area that is rich with quality restaurants and caterers and overstocked with school trained chefs, I found that there was still a need, almost a demand for the simpler types of meals. One of the simplest and oldest was barbeque, and yet so few in the area were offering such to their customers. At least in a digestible form. I wanted to fill that void, a difficult proposition without a physical location. Thus - mobile catering. If the customer couldn't come to me, I would go to the customer.

I searched for the proper equipment and finally settled on a great unit from the folks at Southern Pride. I contacted them and they in-turn referred me to their West Coast distributors, Mike and Nora Hall with Grills to Go out of Madera, CA. Following a few months of further research, and final negotiations, I made my purchase from them - gained my permits and licenses and opened shop.

Our first event - a major one, was the Fourth of July celebration in American Canyon. We served over 800 meals and wondered when the day was done - just what we had gotten ourselves into. But we have learned, and have barbequed and grilled for over 700,000 customers through the 2009 season. Our name has spread and most importantly, we are having fun doing what we do. 

After repeated requests from customers during our first few years, for food menus that were grilled - not barbequed (although many thought that they were the same thing - see Odds and Ends), we purchased an eight burner commercial grill and mounted it on an eight foot trailer. This now gave us the capability to offer additional variety to the menu for any event.

We have operated on the principle that a man's word is his bond, and thus far haven't required a deposit prior to the event. However we have been forced this year, perhaps by economy, perhaps  by the general nature of our society today, to begin requiring a deposit of 25% with the service agreement. We will cook for as few as ten (10) people and have cooked for groups upwards of 350. We are available for contact 24/7/365 and booking on a first commited, first served basis.
