Thank you for taking the time to check out The Missing Rib BBQ website.
I am Jim Carte, and along with my wife Sandy, we run the business as a husband and wife team. I am the Cook, Chef, Pit Master, Marketing Department, Promoter, Website Administrator, Bookkeeper, Event Organizer - whatever you want to call me, you get the idea. Sandy assists me in any way needed to provide customer support before, during, and after an event, while still keeping a full time Monday thru Friday job in the winery business.
Born in Northern California and raised most of my life in Napa, I have been influenced by watching the changes in the Napa Valley since the early 60's. These were changes that focused on quality wine and good food. I was privledged to be able to taste wines that eventually would bring world recognition to the place I called home. I learned to cook at a very early age, and have worked in the food and beverage industries off and on for over 35 years. Although not professionally trained, I have learned many things over the years about the industry. In addition to the art of cooking itself, I also learned that to succeed in a business, you had to provide the customer with a product that was either not available to them, or if available - better than that which is currently offered. You also have to make them feel comfortable, wanted, and appreciated. Customer service has always been, and always will be, the most important aspect of any business with which I am associated. Lastly, I have learned that you have to provide that service at a price that is reasonable. Many of my fellow caterers seem to think that just because they operate out of "The Napa Valley" it gives them license to charge more for their services. I have been told that the "client expects it".
I don't agree. It is my mission to provide traditional American barbeque and grilled food, to a client that will receive my utmost attention and absolute best fare at a rate that is reasonable and right for the event. It is also my hope that when the event is over, the customers and all their guests are happy and content - and willing to tell others about The Missing Rib BBQ.
